Healthy Valentine’s Day Desserts

Valentine’s Day is all about chocolate for my husband and me. Yes, I usually get him roses (because I love roses and he doesn’t buy them for me!) and he usually gets me a beautiful orchid (because they last way longer than cut roses!) And I usually make some kind of decadent yet healthy, decidedly chocolate, dessert.

The chocolate doesn’t stop with whatever I bake though. We usually give each other gifts of more chocolates from local chocolate makers. In Seattle, we have quite a few excellent chocolatiers to choose from. There’s Theo, Fran’s, and smaller shops like the one in my little burb called L’Armoire Chocolat which is a favorite (and conveniently located).

We are both dark chocolate fans and even took a fun chocolate tasting class many years ago where we were to nibble various samples of dark chocolate and note the subtle overtones of berry or raisin or moss (yes there was one that tasted like dirt which the instructor corrected me was “mossy”). We learned about different regions that grow the weird looking pods and how chocolate is made. Fun times! Luckily, I also know that the cacao in chocolate is actually a superfood that can improve your memory, make you feel happier, reduce heart disease, shed fat, boost immunity and create loads of energy, so I don’t feel guilty as long as it’s dark!

So this Valentine’s Day, I’m trying to decide what to make. I have my requirements of course—it must be gluten free, dairy-free and preferably very low in refined sugar. You may be surprised to know that there are a lot of possibilities with those rather restrictive parameters!

My go-to, densely delicious Flourless Chocolate Torte, which I convert to dairy-free by swapping out the butter for Earth Balance sticks, was on the Valentine’s Day menu until today.

This torte is amazing but I just made it for hubby’s birthday in December. That seems not very special to have the same dessert only 2 months later when we so rarely have dessert.

So I thought perhaps a yummy batch of brownies instead. These Gluten Free Vegan Brownies from Beaming Baker look really good. I love gooey brownies and these are not only GF, and DF, they also have no refined sugar!

But then I’m also a big fan of the Minimalist Baker and thought I might try her Easy Vegan Truffles. Don’t they look delicious? They do have “easy” in the title, afterall. I think my husband would love the combination of nuts and cinnamon and dates (again—no refined sugar!).

So hard to decide! What do you think I should make???
