Guilt-free Monster Energy Balls

This is quite possibly my favorite snack! Three reasons: Very kid-friendly, super easy to make, and they taste like my favorite cookie all rolled up in a dairy-free, gluten free little ball of yumminess.

I went to high school in Eugene, Oregon and there was a bagel shop on the walk home from school—The Humble Bagel. This little shop was where I fell in love with cinnamon raisin bagels topped with cream cheese (obviously before my dairy-free, gluten-free days). They also had another delicious offering—Monster Cookies! Monster cookies were gigantic peanut butter, oatmeal, chocolate chip cookies that were about 6 inches in diameter. I’d get one or the other of these not very nutritious snacks nearly every day to eat as I walked the rest of the way home.

These little Monster Energy Balls have all of the sweet goodness of those big cookies but with no refined sugar, no dairy, no gluten and lots more fiber. High in protein for lasting energy and high in fiber, they make a great alternative for an afternoon snack.

Monster Energy Balls 

Directions:
Pulse all ingredients in a food processor or simply mix together in a medium sized bowl, chill for 1/2 hour and then form into 1″ balls. Keep chilled. The oatmeal gets a bit pulverized in the food processor which creates a better texture in my opinion, but it works either way.

Ingredients:
• 1 cup (dry) old fashioned oatmeal
• 1/2 cup dairy-free chocolate chips, preferably dark chocolate
• 1/2 cup organic peanut butter
(or sunflower seed butter if allergic to nuts)
• 1/2 cup ground flaxseed
• 1/3 cup raw local honey
1 tsp. vanilla
